Almond biscotti with cocoa liquor

Today we tried a recipe for almond biscotti with our Perù Puro cocoa.

Ingredients:
200g almonds
400g flour
Salt
50g PERÚ PURO organic cocoa paste
1/2 sachet baking powder
1 tsp bourbon vanilla sugar
250g sugar
4 eggs
2TL grated zest of one organic lemon

Toast the almonds and chop coarsely.
Heap the flour, add 1 pinch of salt, the grated cocoa mass, baking powder, vanilla sugar and sugar and mix well. Press a well in the center and pour in the beaten eggs. Knead all ingredients into a smooth dough. Add a little flour if necessary. Finally, knead in the toasted almonds and the grated lemon zest. Preheat the oven to 180 degrees. From the dough form 3 rolls of dough about 3cm in diameter. Place on a baking sheet and bake for 20 minutes. Cut the biscotti sticks with a sharp knife into slanted pieces about 1cm wide and bake both sides for another 4-5 minutes.

Let cool completely and then store in a nice tin.
