At the end of our cacao’s journey from the Urubamba Valley to Germany are standing our beautiful and super delicious CHUNCHO GOLD GRAND CRU chocolates.
Here we explain how the cocoa finds its way from the pod on the tree to the ready-packed chocolates.

APPROACH

AGROFORESTRY SYSTEMS

Our cocoa grows in species-rich agroforestry systems. To a layperson, they look like rainforest at first glance because there are up to 70 different native tree species here, with individual cacao trees hiding among them. In a young agroforestry system, ground cover plants protect against erosion, provide green manure through nitrogen fixation, and create a perfect microclimate for soil-building organisms and habitat for many beneficial insects. Cocoa trees, seedlings of tropical forest trees and a variety of crops are then planted in this “green carpet.” Thus, forest-like structures are gradually created, which permanently produce many crops and also cacao.

THE ORIGINAL COCOA CHUNCHO

We use only fine flavour Chuncho for our cocoa products and chocolates. It is the original cocoa from which all other cocoa varieties on earth are descended.
This noblest of all fine flavour cocoas grows only in the remote Urubamba Valley in Peru’s mountain rainforest.
Chuncho impresses with its
incomparable fruit notes and special mildness.

HARVEST

REAL HANDWORK

Our cocoa is harvested by hand according to variety. In the process, each individual cocoa pod is inspected for damage. Only the best pods are then processed. They are cut open with a machete and then release the cocoa beans and white pulp. Still on site, the fresh beans with the pulp are packed into bags and transported away. Harvesting in the steep slopes of the Urubamba Valley is strenuous manual labor, with the smallholders determining the pace and scope of their daily work themselves.

TRANSPORT

COMMON CAUSE

Even before the harvest, smallholders coordinate so that they can help each other. Wherever necessary, harvesting is done together. Once the cocoa is bagged, it is collected from the agroforestry systems. The transport is done by one of the farmers with a small cargo motorcycle. This eliminates the tedious journey on foot with the bags weighing over 50kg to the respective farm.

FERMENTATION

OUR SECRET

The secret of a good chocolate also lies in a perfect fermentation of the fresh cocoa. As soon as the cocoa has been picked up from the individual cultivation areas, it is fermented in tropical wood boxes, centrally and temperature-controlled. This complex, three-day process is handled by our trained fermentation master.

DRYING

WELL PROTECTED

Like in an open greenhouse, through which the Andean wind can brush undisturbed, our cocoa is dried after fermentation. Protected by a translucent roof, this drying process is particularly gentle and prevents soiling from roaming animals.

Cocoa beans for direct consumption are washed with spring water before drying.

REFINING ON SITE

MADE IN PERÚ

Raw and washed, roasted or crushed and peeled, from the cocoa bean to cold-pressed cocoa butter and natural cocoa powder, our naturally grown fine cocoa beans are transformed into high-quality food products directly by our partners in Peru. All under the strictest food conditions and of course strictly controlled and certified organic. Here, too, we are pleased about the close and friendly cooperation with the common goal of protecting rainforests and achieving the highest quality.

We bring our best cocoa beans to Switzerland to a noble chocolatier with over 100 years of experience in making the best chocolates.
Specially for our CHUNCHO GOLD Grand Cru chocolates, recipes were developed here that bring out the fruity notes of the original cocoa in the chocolates particularly well and combine them with the legendary delicate melting.

GMUND PAPER CASES

Our chocolate packaging, the so-called cases, are made from the fine handmade paper of Gmund am Tegernsee. Thus, the outer packaging also reflects the high quality of the contents. Gmund Papier has been produced at Lake Tegernsee for over 100 years and supplies, among other things, the cards for the Oscar awards. In this way, masterful cocoa cultivation is combined with the highest chocolatier’s art and the ancient craft of producing the best paper.

Our dark milk chocolate is a creamy, melt-in-your-mouth dream with subtle notes of caramel and freshly roasted hazelnuts.
Our noble Chuncho beans are combined with Swiss organic mountain milk and a masterly conche to create one of the best milk chocolates in the world.
In 2022, she was crowned as European Milk Chocolate Champion.

The CHUNCHO GOLD Grand Cru 52% is an organic milk chocolate with at least 52% cocoa content. Of course, this chocolate is gluten-free and free of soy lecithin, clarified butter, palm fat, flavorings or stabilizers.
