Normal cocoa powder is mostly an industrially processed product. Very high temperatures and pressures are often generated during roasting, grinding and pressing. In the process and during chemical post-treatment, many of the valuable ingredients are lost.
PERÚ PURO natural cocoa powder is completely different. Expertly fermented, dried in the shade, gently roasted and finely ground by hand, our organic cocoa mass is created first. When we then extract the cocoa butter from this through a cold pressing process, our natural cocoa powder is created. We leave a cocoa butter content of 20%-22%. Si it is not quite as easily soluble as instant powder, but much, much more pleasant taste. Of course, we do not use alkalization, instatization or other chemical after-treatments.
